Kumara, apple and walnut loaf

Gluten free, dairy free, grain free

Ingredients

1 large or 2 small Kumara / sweet potato (about 400g) I use orange Kumara

2 apples - red or green. I usually use one of each

3 eggs

1/2 cup coconut flour

1/2 cup tapioca flour

1 teaspoon baking powder

1/4 cup walnuts

1 tablespoon of coconut sugar or maple syrup - optional (more or less to taste)

Directions

Heat oven to 180°C and line a loaf tin with baking paper.

Peel and cook kumara and apple until soft. Blend to make a smooth like apple sauce. I wait until it is cooled to add the eggs. Add eggs and blend until smooth. I use a stick blender for this step.

Fold in all the other ingredients. I save a few walnuts to put on top.

Press mixture into the loaf tin making sure to press down and flatten the top.  Bake for 45 - 60mins.  

Delicious served with coconut yogurt. Keeps well sliced in the freezer and is so quick and easy to make.   x Leanne
